It is Bison show day in the yards! A show day for the Bison includes them being evaluated by a group of three judges who rank the animals according to their ideal Bison characteristics.
The Bison are divided up into age classes and ranked based on their structure, width and their head placement.
Bison are similar to cattle as they are raised for both breeding, as well as for market purposes.
Individuals who are involved in the Bison industry are called buffaleros.
“Bison meat is really good for you and tastes amazing,” said buffalero Clara Chaffinn
Chaffin has been involved with the Bison show at the stockyards as a buffalero for the past five years.
During the National Western the buffalero’s also host a question and answer class for individuals to come learn more about the Bison industry.
